What you can’t ever say ‘no’ to: SOBA SALAD

IMG_2671For those days you’re so worn and can’t be bother to cook anything that’s too fancy. Just grab your raw vegetables out of ya fridge and start chopping ’em up! The only thing you need to be cooking is your soba, nothing else. Drown them in your favourite dressing and you’re ready to go!!!!!!!!!! I will not be listing the measurements bc it can be anything and nothing will go wrong. Experiment is key, it makes you better πŸ™‚

What you need for the salad:

  • soba noodles
  • a tsp sesame oil
  • pea sprouts
  • red radish
  • onions, sliced
  • purple cabbage, sliced thinly
  • corn kernels
  • nori

Miso dressing:

  • 2 tbsp miso paste
  • 1 tbsp sesame oil
  • 1/2 lemon
  • 2 tbsp water

Add water into your saucepan and bring it to a boil, then add your soba noodles. Add a tsp of sesame oil to prevent them from sticking. Let them cook for about 5 minutes. Once they’re done, drain them in your basin and put it in your bowl.

Now you dump in the rest of your dry ingredients!!!!!! leave it aside while we make our miso dressing.

Whisk up your miso paste, sesame oil, lemon juice, and water in a small bowl. You may taste it as you combine them to see how salty you would want them to be. Add more water, if you’re not so fond of saltiness.

And when you;re done, pour them into your bowl of soba salad and you’re ready to dig in!
